Great quick & hearty meal. This one is destined to become a winter favorite!
- 1 lb lean ground beef
- 1 lb thick bacon, diced
- 2/3 cup uncooked long grain rice
- 8 cups cabbage , chopped
- 1 large diced onion
- 3 cloves minced garlic
- 1 (28 ounce) can diced tomatoes
- 1 (10 oz) can tomato soup
- 2 tbspns tomato paste
- 5-6 cups beef broth
- 1 1/2 cups V8 or other vegetable juice
- 1 tbspn Worcestershire sauce
- 1 tsp paprika
- 1 tsp thyme
- salt and pepper
- parsley for garnish
Cook the bacon until crispy. Remove and place on paper towel to let grease drain. Leave the bacon grease in the pan. Store the bacon in the fridge once cool.
Brown the ground beef & onion then drain.
Dump all ingredients except the bacon & parsley in the crockpot and stir it all up.
Cook on high about 4 hours or on low for around 7.
Stir in about 1/2 the bacon and let it cook for another 15-20 minutes.
Serve it up and garnish the bowls with the remaining bacon and parsley.
