Crockpot Taco Soup

Who doesn’t love mexican food? Who doesn’t love a good warm bowl of hearty soup to warm the belly and the soul? Combine them both and you have this diabetic friendly, hearty crockpot meal.

Prep Time: 30 minutes
Cooking Time: 6-7 hours
Servings: About 12 – 350 calories/37 carbs

1 pound lean ground turkey
1 pound lean ground beef
1 chopped onion
2 tablespoon canola oil
Salt to taste
2 tablespoon chili powder
4 teaspoons cumin
2 teaspoon garlic powder
2 cup frozen corn
1 (15-1/2-ounce) can black beans, rinsed and drained
1 can chili beans
1 (4.5-ounce) can diced green chilies
2 (14-1/2-ounce) cans no-salt-added diced tomatoes
1 can Rotel
2 cup fat-free, reduced sodium chicken broth

Saute the onions with a bit of butter until they start to get soft. Add the meat and cook until done. Put all ingredients in a crockpot and cook 6-7 hours on low.

Serve as is, or garnish with some grated cheese, sour cream or other toppings of your choice.
