Yellow squash stirfry

Its time for the garden to start giving us squash. How to cook it up? Try something different tonight. This creative combination of bacon, squash, onions and a hit of jalapeno is sure to liven up your dinner table, on the side or as a light summer main dish.


  • 3-4 slices of bacon
  • 3 squash, sliced
  • 1 small onion (most of it anyway) sliced and quartered
  • 1 jalapeno chopped
  • soy sauce
  • salt & pepper


Cook the bacon, crisp but not burned. Pull the bacon and set it aside.

Cook the squash, onions, and jalapeno in the bacon grease until starting to get tender, but still firm. Crumble the bacon into the pan with a good dash of soy sauce. Salt and pepper to taste. Cook just long enough to get it all hot.
